Grilled Zucchini, Corn & Halloumi Salad with Chipotle-Lime Dressing on Labneh


A fresh summer recipe that brings smoky, tangy, and creamy all in one bite. This vibrant dish is meant to be scooped with crunchy corn nachos and shared with friends over a chilled glass of rosé. It’s the kind of recipe that looks like sunshine on a plate and tastes even better.

 Ingredients

  • 2 zucchinis, cut in half lengthwise, then sliced into half-moons
  • 2 ears of fresh corn, husked
  • 1 package of halloumi cheese, cut into thick slices
  • ½ tsp chipotle powder
  • ¼ tsp ground cumin
  • Salt and freshly cracked pepper, to taste
  • Juice of 1 lime
  • Labneh, to spread as a base (about ½ cup or more, depending on how creamy you like it)
  • A drizzle of avocado oil, for grilling
  • Optional: corn nachos or pita chips for serving

 Instructions

  1. Preheat your grill pan or cast iron skillet over high heat. Add a small drizzle of avocado oil.
  2. Grill the corn cobs until lightly charred on all sides, turning occasionally for even color. At the same time, grill the zucchini slices and halloumi until golden and caramelized—zucchini should be tender, and halloumi should have those perfect crisp edges.
  3. Once everything is grilled and golden, remove from the heat. Slice the corn off the cob.
  4. In a mixing bowl, combine the grilled corn kernels, zucchini, and halloumi. Add chipotle powder, cumin, lime juice, salt, and pepper. Toss gently to coat everything in the warm spices and citrusy zing.
  5. Let the mixture cool slightly—this salad is best served warm or at room temperature.
  6. To serve, spread a generous layer of labneh on the bottom of a shallow bowl or serving platter. Top with the grilled veggie mixture.
  7. Finish with an extra squeeze of lime or a pinch of flaky salt if you’d like. Serve with corn nachos or warm pita chips.
